I'd say ghost in shell, I prefer the stand alone complex series.
The samurai 7 animated series is great and dare I say it better than the Kurosawa classic.
Also Blue eyed samurai on Netflix is off to a great start too.

I won't lie I've only seen a handful of episodes of demon slayer but its on my to watch list! ^_^
The couple of anime shops I've been too actually have the coolest demon slayer stuff! it's been a huge reason it got on my list, but is it overhyped or is it that amazinggg?

Akira, Dominion Tank Police, Berzerk, Daimos(Starbirds movie here in US), Attack on Titan.....
Mushishi is a super underrated anime. It's a much slower pace than some of the others mentioned here. More thoughtful and heartfelt.
Cowboy Bebop is forever frozen in time (no debate) as #1 for me, with honorable mention of Fist of the Northstar for the old-school stuff.
Rurouni Kenshin (season 2) is the arguably the best combat anime of all time.
JoJo's Bizarre adventure, all seasons belong in any top 10 list.
Also, love Blade of the Immortal.
